I'm going to pack a bunch of our own food. I made some low-cal chicken salad that we can spread on crackers. I also made some hummus to spread on crackers-here is a couple great recipes for hummus. We're going to take some of the beautiful cherry tomatoes from our garden that we actually succeeded in growing this year and some blueberries and almonds. I got some different kinds of granola from our local co-op and mixed them all together and I also bought a couple bags of G.H. Cretor's popped corn. Some of the BEST popcorn on the face of the planet... If you haven't tried it, look for it in your grocery store's health food section. Here's their website-www.ghcretors.com. I also got some great tips from WiseBread.com. One AWESOME idea-take a couple large mason jars, fill with water and a tea bag, put in the window for sun tea. Why the heck didn't I think of that earlier?!
I think the key to a healthy road trip is definitely spending a couple of hours doing research on what to take with you and what places to visit. It's well worth it. This afternoon, I'm going to our local library to find a couple of travel books on some of the "off the beaten path" places to eat and visit. Hopefully I find the book I'm looking for about eating healthy and local wherever you travel. I found it once, almost bought it, and put it down. Bummer.
