I made something
amazing this weekend. It's called tomato pie. I got the recipe (get ready to not be surprised) from my mother. I looked online to see if there were any other recipes similar and there were, of course. Paula Deen has one that is atrociously high in calories and jam-packed with mayonaise. The recipe I have is by no means "low-cal" but one slice is only 249 calories, it's got hearty, healthy ingredients, and it tastes incredible. Oh, and vegetarians. There is no meat! Carnivores, I'd suggest adding some chicken if you like meat with your meal, but I don't find it at all necessary. It's totally great on it's own. Oh-and the last perk? It took me about 10 minutes to put it all together. EASY PEASY!
Ingredients
- 3/4 C Greek Yogurt
- 1 C Panko Crumbs
- 1/2 Minced Onion
- 1 C Shredded Cheddar Cheese
- 6-8 Roma tomatoes, chopped
- Parmesan cheese
- 1 Premade Pie Crust
Instructions
- Preheat oven to 375ยบ F.
- Mix Greek yogurt, panko crumbs, minced onion, and cheddar til blended well.
- Arrange pie crust in dish and put 1/3 of mixture into pie crust. Top with 1/2 of the tomatoes
- Repeat. Then the final layer will be the cheese mixture and sprinkle with some parmesan cheese.
- Bake for 30-40 minutes. It will be done with pie crust is golden brown and cheese mixture is bubbly.
- Let rest for 10-15 minutes to cool and firm.
